- You need 1400 ml whole milk
- Use 600 ml heavy or double cream
- Take 2 Vanilla bean pods split with seeds removed
- You need 3/4 piece freshly grated nutmeg
- You need 3 cinnamon sticks
- Provide 350 ml vanilla spiced rum
- Provide 7 large eggs
- Provide 200 g granulated sugar

- Combine milk, cream, nutmeg, cinnamon sticks, and vanilla seeds and the pods into a large saucepan. Bring to the boil slowly then remove from the heat
- Whisk the egg yolks and sugar together until thick ribons form, then slowly add and whish into the milk mixture
