The ingredients needed to make Roasted Fingerling Potatoes:
  1. Take 1 1/2 lb fingerland potatoes
  2. Use 4 tbsp olive oil
  3. Use 8 garlic cloves - peeled and halved
  4. You need 1 tbsp dried parsley
  5. Take 1/2 teasppon salt
  6. Prepare 1 pinch of pepper
  7. Get 1 salt and pepper to taste
Instructions to make Roasted Fingerling Potatoes:
  1. Set up aluminum foil to make a "foil packet" for grilling. (Alternatively this can be made in a covered baking dish in the oven.) Grease top and bottom of foil with about 1 teaspoon of olive oil each (You could use cooking spray if you preffered)
  2. Combine remaining ingredients - make sure potatoes are evenly coated with olive oil. I do this right on the foil to save myself a dirty dish.
  3. Seal up packet. Grill over indirect medium heat for 40 - 50 minutes or until tender. If using oven - bake covered at 400° for 40-50 mins or until tender.
