- Prepare 1 tbsp butter
- Take 1 clove garlic
- You need 1 small onion or 1 white spring onion
- Take 1 cup frozen sweet corn
- Provide 1/4 cup chopped beans
- Provide 1/4 cup chopped carrot
- Provide 2 cups water
- Get As per taste salt
- Get 1/2 tsp black pepper powder
- Take 1 tbsp corn flour + water
Instructions to make Sweet Corn Veg Soup:
- Take 1/2 cup defrosted sweet corn in a mixer jar and grind to a fine paste adding little bit of water.
- In a pan melt butter add finely chopped garlic and saute till aromatic (do not make it brown). Add finely chopped onion or spring onion and saute until translucent.
- Add sweet corn paste and saute for a minute. Next add 1/2 cup sweet corn, chopped beans and carrots. Saute well.
- Add plain water or vegetable stock if available. Add salt, pepper and let it come to a boil. (You can remove the foam that floats on top)
- In a bowl make corn flour slurry by mixing corn flour wit water. Add it to the soup with continues stirring. Once the soup thickens switch off the flame.
