The ingredients needed to make Peter's Käsespätzle:
- Provide 6-7 medium onions
- Take to taste Salt and pepper
- You need 1 tsp Paprika powder plus more to sprinkle
- You need 2 Tbsp schmaltz or butter
- Take 500 g spätzle
- Get 350 g Grated Emmentaler (or Swiss maybe) cheese
Instructions to make Peter's Käsespätzle:
- Dice onions. In a big frying pan, melt the schmalz or butter. Add onions and cook on low-medium heat until very soft and golden, 10-15 minutes. You want them really sweet.
- Add paprika, mix and continue to cook a few minutes on low.
- Meanwhile cook up the spätzle according to package instructions or even better, make homemade! My uncle used the packages ones from the store.
- Butter up a large Dutch oven or oven safe dish. Preheat oven to 100C/210F.
- Drain spätzle when done.
- Put a third of the spätzle on the bottom of the pot, and top with a third of the onions…
- Top that with a third of the cheese.
- Repeat two more times: spätzle, onions, cheese. Spätzle, onions cheese. Sprinkle some more paprika on top.
- Put in oven at 100C/210F for 10 minutes or until cheese is melted.
