The ingredients needed to cook Squash Soup:
- Use 2 medium sized squash
- Get 2 large red onions, chopped
- Take 1/4 cup finely chopped onion leaves
- Get 1 Tbsp garlic and ginger paste
- Get 1 finely chopped jalapeño pepper or any pepper you like
- You need 2 cups chicken or beef stock
- You need 1 handful parsley for garnish
- Prepare to taste salt and black pepper

- Pre heat the oven at 150°C on grill.Peal and clean out the squash. Cut in cubes and place on a oiled oven pan or skillet.
- Add the onions, garlic & ginger paste, onions leaves, salt and pepper and the jalapeños, mix well and place in the oven for 20mins
- In a pan, heat the chicken stock and place the roasted squash in the pan, reduce heat to low and let it cook for 5mins.
- You can use a hand held blender or a normal blender to blend the mixture. Place in a sieve and use a spoon to make your work easier.
- Place the mixture into a pot and let it boil for 10mins. Serve in a bowl. Add some cream or plain yogurt and garnish with parsley. You can serve with toast or croutons. Enjoy
