  1. Provide 8 oz Crab Meat
  2. Use 2 each Green Onions, minced
  3. You need 1/2 cup Crackers, crushed
  4. Prepare 1 each Egg, lightly beaten

  6. Take 1 tsp Dijon Mustard

Steps to make Crab Cakes:
  1. Combine egg, mayonnaise, mustard, and spices and mix thoroughly

  3. Mix together just until the liquid is absorbed.
  4. Divide mixture into 4 portions, and form into patties approximately 1/2 inch thick.
  5. Put enough oil in a skillet to come 1/4 to 1/3 of the way up the crab cakes, place over medium heat.
  6. When oil is hot, place patties into skillet and cook approximately 5 minutes on each side, or until golden brown and heated completely through.
  7. Remove patties from skillet, and allow to drain on a rack or paper towels to remove excess oil.
